Whenever possible we always make our seasonings at home. This particular mix is a staple in our home! This spice mix uses the staple Italain herbs: basil, garlic, oregano, parsley, red pepper flakes, rosemarry, sage and thyme. Then we throw in a couple of more things, to really compliment the oregano: marjoram, onion powder,
Ways to use it: This Italian seasoning mix can be used in so many ways: to flavour sauces, sprinkled on meats, added to salad dressing. We use it most often in our homemade breadcrumbs.
No Waste Kitchen: This is a great way to make sure fresh herbs from your garden or the grocery store never go to waste. Whenever we buy fresh herbs from a market, the first thing we do is set a quarter to half the amount aside for drying. We never buy dried herbs like rosemary, basil, or thyme from the grocery store. From the time they're picked to the time they show up in your cart, the dried herbs have often been in the system for many months, or even years. Some companies also used lower quality herbs for drying, while the best ones arrive fresh at your grocery store. So for the best flavour, dry your own herbs! Just set them aside on a plate or paper towel and let them air dry until they crumble easily between your fingers. We even make our garlic powder and onion powder, but these are a more labour intensive.
2 tsp dried oregano .5 - 1 tsp garlic powder* 1 tsp dried basil 1 tsp marjoram 1/4 tsp onion powder 1/4 tsp parsley
1/4 tsp dried thyme 1/4 tsp sage 1/4 tsp rosemarry 1/8 tsp chili flakes 1 tsp fresh coarsely ground pepper .5 tsp salt 1 tsp dried lemon rind (optional)
*if using homemade or artisanal garlic powder, aim for half. They tend to be much more intense. If you're using a garlic powder from your grocery store, use 1 tsp.
Mix the ingredients and pour into a spice jar. If you're using your own dried herbs make sure you get them ground nice and fine.
